If I have an extensive medical history will that be a risky factor when going to obtain my Class One Medical? The difficult thing is that I have multiple conditions that are pretty rare that aren’t really talked about. I don’t have any of the FAA’s “disqualifying conditions”, but I have my own that aren’t mentioned.

This is a discussion you will need to have with an AME when you apply for your 1st Class Medical. We can’t answer those kinds of questions. Most likely the AME will require you to submit to additional medical screenings/exams before a decision is made.
