I’ve looked on ATP’s website and I can’t find the standalone courses (CFI, CFII, ME(I), Pvt). Did ATP stop teaching the add-on courses? It use to be all over the webpage.

That is correct, the CFI certificates (and opther add on certificates) are now only offered as part of the Airline Career Pilot Program.
